Pastry Chef and Chocolatier

Born in 1986, Pastry Chef and Chocolatier, Pierre Abi Hayla is one of the youngest Chef Patissier in Lebanon and has an indescribable passion for chocolate. His amazing skills and creativity made of him one of the most renowned chefs in the country.


Chef Pierre started his journey by studying in Beirut, while mastering his skills with the most prestigious pastry houses in the country.

After intensive trainings, by the age of 21, he joined LE VENDOME Intercontinental, Beirut.


He spent eight years at Le Vendome and PhoeniciaIntercontinental, which afforded him a rich, varied career as a pastry chef. He was directly responsible for the restaurants outlets there, as well as room service and external events.

During this period, he was able to ingest a wealth of knowledge from world-renowned Chefs from Europe, periodically hosted by the hotels.


Eager to learn more about chocolate, Chef Pierre also travelled to Paris’ finest houses of chocolate for training stints, where he mastered the art of chocolate making and let his imagination grow wider.

This journey started at Le Nôtre Paris under the direction of Chefs Gilles Maisonneuve, Richard Ildevert and Christophe Rhedon. He also went through intensive training with Ecole Nationale Supérieure de la Pâtisserie under the direction of world pastry champion Chef Marc Rivière and the executive pastry chef of Paris’ Potel et Chabot. Not to mention at L’école du Grand Chocolat ValrhonaFrance under the direction of Chef Carles Mampel, Best Craftsman of Spain and owner of Maison Bubo in Spain.


In Lebanon, Chef Pierre took part in numerous gastronomy weeks including “Semaine Tout Chocolat” with Chef de l’école du Grand Chocolat, Gianluca Fusto. As well as other famous chefs including Kim Canteenwalla, executive chef at”Encore Hotel Las Vegas”, 2 star Michelin Chef Jean Chauvel, 1 star Michelin Chef and Maitre Cuisinier de France, Alain Reix, member of “La Haute Cuisine francaise” and the “Toques Blanches francaises et internationals” and 2 stars Michelin Chef Stephane Gaborieau, owner of the restaurant “Le Pergolèse”.


Between 2010 and 2014, Pierre gathered multiple prizes in the major hospitality fair in Lebanon, “Horeca”; His most acknowledged project was the chocolate dress he presented at the Salon Du Chocolatin 2014.

Catching the eyes of restaurateurs, Pierre was since then commissioned as the consulting pastry chef at many of their restaurants in Beirut.


At the beginning of 2015, Pierre stepped down from LE VENDOME to pursue a dream; the time was ripe to open his own chocolate atelier. Partnering with his elder brother Pascal, he has since launched LE NOIR…


Chef Pierre believes he still has a long way to go and many opportunities to still dazzle the crowd with his amazing creations.
